I have a VW Vento. I had the sensor replaced but eversince I have noticed my guage going up after driving for a few minutes. I'm not sure I understand the whole situation. Your temperature guage is supposed to go up after a few minutes. Your engine temperature should normally be around 180 to 200 degrees. It takes a while, especially in cold weather, for the engine to get that warm. If the needle is bouncing all over the place, I would bet on a loose connection somewhere, or some air in the coolant system.
sounds like trapped air or even a loose connection and would advise it is checked by a garage, If not checked it could cause more damage.
Before you re-replace the sensor, bleed the cooling system. Sounds like there could be air in the system. If an air bubble passes by the sensor it can change the reading, being that the sensor has a different sensitivity to fluid vs. air.
Replace sensor and check for air bubbles.
