I make wedges following a really easy recipe. cut the potatoes up, toss them in a bowl with cajun spice mixture and bake for around 40 minutes. Really easy and really good
Wedge your potatoes. Toss them in a bowl with a little Olive oil and the spice or spices you like best (no salt). Place them on a cookie sheet in a preheated 350 degree oven and bake for 20 to 40 minutes, depending on the size of the wedges, turning them ever ten minutes. Once they are done, if you want them salted, this would be the time to do it.
just toss them in some Italian dressing and bake covered. Maybe 1/2 hour or so at 375. Uncover the last few minutes to brwn them up?

Serves 4.
1 (16 oz.) carton plain lowfat yogurt
1 (1 oz.) pkg. ranch style party dip
3 baking potatoes
2 tbsp. butter, melted
1 tsp. seasoned salt
1/2 c. shredded Colby cheese
Combine yogurt and party dip in small bowl. Stir to mix. Cover and refrigerate. Scrub potatoes. Cut each in half lengthwise. Cut each half into three wedges. Arrange wedges spoke-like on platter or pie plate in microwave. Brush each wedge with butter; sprinkle with seasoned salt. Cover with waxed paper. Microwave at high for six minutes. Rotate plate quarter turn and microwave seven minutes at high. Let stand three minutes. Test for doneness. If potatoes are not tender when pierced with a fork, microwave on high one to three minutes more or until wedges are tender.
Remove waxed paper. Sprinkle cheese over potatoes while potatoes are hot to melt cheese. Serve with prepared party dip.
